I was looking for an almond flour recipe this morning to try something new. I stumbled upon a Pumpkin Spice Bread Recipe on Crow Recipes that I decided to use. However, I decided I need to triple the recipe and after viewing the spices I decided I would alter some of the ratios. After all I hear nutmeg can be toxic in high amounts and if I was going to eat a lot I didn’t want to have too much in my recipe. I also decided I wanted a sugar free recipe. So, we took out the honey and replaced it with xylitol and Stevia. Also I used Organic boxed pumpkin which is much drier than canned pumpkin, which lead me to add a little bit of water. I also added olive oil because xylitol tends to dry out baked goods.
What was the result?
My family LOVED this MOIST Breakfast Snack Bread Recipe. I should mention that rather than making a Spice Pumpkin bread it produced a flavorful Gingerbread Snack Bread with the texture of banana bread or moist pumpkin bread. If ginger is not your favorite flavor scale back on it to let the pumpkin shine through. I used a fresh Organic Ginger powder that was very strongly flavored, producing a strong ginger flavor.
Sugar Free- Grain Free- SCD/GAPS (If you use honey)-Dairy Free
328 grams of Almond Flour
3/4 ts Salt
1 1/2 ts Baking Soda
1 1/2 tb Cinnamon
1 ts Nutmeg
1/4 ts Cloves
1 ts Ginger
172 grams Xylitol
3 Drops Stevia
15 oz Organic Pumpkin
1 TB water
1 TB Olive oil
Combine: Preheat oven to 350 degrees.
Dry mix and spice mix set aside. In a separate bowl or blender which is better if you are using boxed or fresh pumpkin, blend liquid ingredients. Combine all ingredients mixing until well combined, but do not over mix. I used a huge bread pan, but you can use a large flat pan like a 13×9. Spray first. I baked mine for 25 minutes then flipped cooked 25 minuter more, flipped then turned the heat up to 375 and cooked about 15-20 more minutes, until firm.
I love this black silicone knife for separating baked goods that are stuck to pans. I like that it does not scratch and I can use it to slice when I am done.
A very moist snack bread. My family wanted MORE.
