Our little guy LOVES trains, especially Thomas the Train. So, at the last minute I decided we would make him a Thomas the train Gluten Free birthday cake. It was last minute and everyone pitched in. The girls made the fondant and most of the decorations with the help of big brother. Daddy made Thomas and Mommy designed the cake and put it all together. I only had 2 hours of sleep the night before his birthday, but it was worth it. We were so crammed for time it was not perfect, but it was SUPER delicious! It was kind of an after thought, but it is no wonder I went to bad at 3:45 am. I always get these bright ideas at the last minute because I want to make sure EVERYONE is feeling as if they are cared for and important. So, it wasn’t until the next day that I realized I made this fully tailored allergy friendly menu that was planned as I went.
Chicken Enchiladas made with Organic Free Range Chicken and Homemade Enchilada Sauce and a mix of Goat and Daiya Cheese.
For my son I made him Enchiladas without Sauce, No Goat Cheese and Daiya.
For my Friend I made here Enchiladas with Sauce, No Goat Cheese and added everything else.
For my mom and dad and brother’s family I made Enchiladas with Regular Cheddar Cheese.
For my daughter who is on a grain free eating plan I made her Eggplant, dairy free enchiladas.
and on the side homemade pinto beans for all who could tolerate them! I finished frosting my cake right when I got to the venue! Whew…. This momma is tired. I forgot to mention that I just had a GF Baking Course at my home this Friday with a kitchen full of women. I guess I don’t have to tell you that I slept in yesterday!
